About Khalid Elmaroudi – Welcome to my official blog, where I share my story, my passion for Moroccan cuisine, and the journey behind Tajine Recipes.

My name is Khalid Elmaroudi, a retired transport professional based in Morocco. After many years working in the taxi industry, I now own a vehicle that operates across the country — with my trusted driver handling the trips, while I take care of the maintenance.

This new chapter in my life gave me time to focus on something I’ve always loved: Moroccan cuisine. Over the years, traveling across Morocco exposed me to the rich diversity of regional flavors. From the markets of Marrakech to the small villages of the Atlas Mountains, every place offered a new taste and tradition. That experience inspired me to create this blog to share the heart of Moroccan food with the world.

Why I Created Tajine Recipes – About Khalid Elmaroudi’s Mission

Moroccan food is more than just cooking — it’s storytelling. Every dish carries memories, culture, and family traditions. My mission is to make these flavors known and accessible to people everywhere, especially in places like the United States where Moroccan food is still growing in popularity.

Whether you’re a home cook, a food explorer, or someone far from home missing Moroccan flavors — this blog is made for you.

Meet Chef Reda – My Virtual AI Assistant

To help me manage the content and structure of this blog, I created Chef Reda — a friendly virtual chef powered by AI. He helps me format the recipes, follow Google’s best practices, and guide readers step-by-step through the cooking process.

What’s Next for Khalid Elmaroudi?

This blog is more than a hobby — it’s my way of connecting with people, honoring my culture, and building something meaningful during retirement. I hope it inspires you to try something new, explore Moroccan food, and maybe even visit my country one day.

As the founder of Tajine Recipes, I also see this blog as a way to connect generations — preserving Moroccan culinary traditions that are often passed down orally from mothers and grandmothers. Each dish I share carries a piece of my country’s soul, whether it’s a warm bowl of harira or a slow-cooked lamb tagine with prunes. I believe that by documenting these recipes and sharing them globally, I’m contributing to something meaningful: cultural preservation through food. It’s not just about taste — it’s about heritage, memory, and identity. That’s why I put care into every recipe I publish, and why I hope every visitor feels a little closer to Morocco with each dish they try.
