Ingredients
  

  • 4 chicken thighs (bone-in or boneless)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cooked chickpeas (canned or freshly boiled)
  • 1/2 cup raisins
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp ground cinnamon
  • 1 cup chicken broth
  • 1/2 cup canned diced tomatoes
  • 2 tbsp honey (optional, for extra sweetness)
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley or cilantro (for garnish)

Instructions
 

  • Brown the Chicken: Heat olive oil in a tagine or deep skillet over medium heat. Season the chicken thighs with salt and pepper, then sear them for 5-6 minutes on each side until golden brown. Remove and set aside.
  • Cook Aromatics: In the same pan, sauté onions and garlic until softened and aromatic, about 3-4 minutes.
  • Add Spices: Stir in cumin, coriander, turmeric, paprika, and cinnamon. Cook for 1-2 minutes to release the spices' aroma.
  • Build the Sauce: Add chicken broth, diced tomatoes, and honey (if using). Stir well, then return the chicken to the pan. Cover and simmer on low heat for 30 minutes.
  • Add Chickpeas and Raisins: Stir in the chickpeas and raisins. Continue simmering for 15-20 minutes until the chicken is tender and the sauce has thickened slightly.
  • Garnish and Serve: Sprinkle with fresh parsley or cilantro before serving. Enjoy with couscous, rice, or flatbread.

  • For a vegetarian option, replace the chicken with hearty vegetables like sweet potatoes or zucchini.
